Go for onion, poppy seed, or everything bagels (the ones I used).Crispy Bacon: You will need good quality thick-cut bacon that is cooked until crispy and nice.Cheese: I like American cheese to make bagel sandwiches, but if you want to use something else then go for sharp cheddar slices, Mozzarella, Havarti, Pepper Jack, Colby Jack, Gruyere or swiss cheese.

You don’t have to turn on the oven, use the skillet to toast the bagels instead! Butter the bagels and toast them on the skillet buttered side down. To melt the cheese, turn the bagels over, add cheese, and cover with the lid until it’s melted.Add-ons: Personalize the sandwich and add favorite ingredients! Think fresh slices of tomato, sliced avocado, spinach, or arugula. You can even do sliced red onions with smoked salmon if you like. Or other meats like deli ham, leftover ham, patty sausage, Canadian bacon, or turkey bacon.Sauce Options: We’re doing just hot sauce here, but feel free to add ketchup, pesto, sundried tomato pesto, aioli, guacamole, salsa, or hollandaise sauce.Scrambled Eggs: If you prefer scrambled eggs, you can definitely do that instead of fried eggs. Just make sure not to overcook them.Storing: Keep leftovers covered in the fridge for up to 3 days. To reheat, I suggest wrapping in foil and reheating in the oven at 350°F/180°C until warmed through. Freeze for up to 3 months.
