In the upper midwest, hotdish is a big deal. These hearty dishes packed with meat, cheese, and creamy soups are topped with layers of tater tots and enjoyed at home, church and school potlucks, and family get-togethers.  I’m so glad that the concept of casseroles with tater tots didn’t just stay in Minnesota. People all over have realized how amazing this meal is, and how simple it is to make. This is a kid friendly meal that everyone in the family will enjoy.  I don’t love using canned soups in recipes if I don’t have to. They aren’t very cost effective, and I can’t control the flavor and ingredients. So I’ve developed this tater tot casserole recipe without using cream of anything soup. Instead, we’ll make a creamy sauce from scratch that tastes so much better. You are going to love it! Another take on this dish is my easy cowboy casserole, it’s creamy, beefy, filling, and delicious! Your family will also devour my recipe for chicken tater tot casserole just as quickly.
