For this recipe, I am using a 295ml Denby Kiln Blue mug. They’re the perfect size with ample clearance to prevent any overflow. Of course, if you don’t have one on hand, a ramekin will work just as well.

Don’t have an air fryer – you can make mug desserts in your microwave too. Some of my favourite ones are Nutella mug cake, Chocolate brownie in a mug and Mug Chocolate Chip cookie.

Self-Raising Flour (also known as self-rising flour): Can be substituted with plain flour or all-purpose flour by adding baking powder to it. Sugar: Granulated sugar is used here, although caster sugar also works well. Milk: I use any milk that’s in the fridge – whole milk or semi-skimmed milk usually. Any plant-based milk will also work. Oil: I’ve used Sunflower oil. Substitute with Vegetable oil. Vanilla Extract: Adds additional flavour to the cake. Strawberries: Just two of them, chopped.

Step 1: In the mug, add the flour, and sugar. Use a fork to combine. Step 2: Add the wet ingredients – milk, oil, vanilla extract, and strawberries mix well. Step 3: Place the mug in a preheated air fryer. Cook in the air fryer for 13-15 minutes. Check whether the mug cake is baked through by inserting a skewer or toothpick in the middle of the cake. If it comes out clean, the cake is done. If the skewer is wet or with moist crumbles, cook for a further 3 minutes. I cooked for a total of 15 minutes. Step 4: Take the mug cake carefully using a kitchen towel or oven mitts. Allow it to cool for 5 minutes before serving. Serve with sliced strawberries and cream.

Yes, you can prepare the mug cakes and freeze them for later. Just like oven-baked cakes, you can freeze the mug cakes covered in the freezer for up to 3 months.
