When the weather warms up, I love indulging in frozen treats—it’s quite natural! However, many ice creams are high in sugar, making guilt-free indulgence a challenge. The good news is that you can enjoy this homemade strawberry cheesecake ice cream any time, any day, with zero guilt. My healthy ice cream is made with fat-free cottage cheese, zero-calorie sweetener, almond milk, and strawberries. All the ingredients are nutritious and yet so tasty. Healthy doesn’t mean you have to compromise on deliciousness. This strawberry ice cream is a perfect example. Why not enjoy it for breakfast, topped with granola? Ingredients for Strawberry Cottage Cheese Ice Cream

You’ll only need 4 ingredients to make this delicious ice cream recipe:

Cottage Cheese: I use fat-free cottage cheese in my ice cream recipe, but you can substitute it with full-fat cottage cheese too. It’s packed with protein and calcium. ‘0’ Calorie Sweetener: These are easily available at your grocery store. If you’re not particular about zero-calorie sweeteners, you can use sugar or maple syrup as an alternative. Unsweetened Almond Milk: I use almond milk in my ice cream, but you can always use whole milk or any other milk of your choice. Fresh and Frozen Strawberries: This recipe uses both strawberries. 

Optional Add-Ins: Lemon juice, vanilla extract.

How to make easy low calorie strawberry ice cream?

The recipe is super simple to follow.

Blend all ingredients in a food processor or blender. Transfer the mixture to a chilled ice cream maker bowl and churn for 20-25 minutes. Add sliced strawberries 5 minutes before the churning ends and mix well. Serve immediately for soft serve ice cream. For a firmer texture, freeze for at least 2 hours before serving.

What is the difference between Cottage Cheese and Paneer? 

Cottage cheese and paneer(Indian Cottage Cheese ) are similar but different in terms of texture and taste. Cottage cheese is softer, with some whey (the liquid from milk) still in it. Paneer is firmer because all the whey is drained out.Cottage Cheese cannot be used as a replacement for Paneer Dishes like Paneer Peshawari, Palak Paneer, Paneer Makhani, Matar Paneer Butter masala or even Paneer Biryani.

Can I Use Regular Granulated or Caster Sugar Instead of 0% Calorie Sweetener in This Recipe?

Yes, you certainly can but in that case the recipe does not stay as low calorie. I haven’t tried using an alternative sweetener like Honey/ Maple Syrup for this recipe, but I  have made Vegan Mango Sorbet with Maple Syrup and Coconut milk in the recipe. And it tastes delicious.

Remove from the freezer at least 15 minutes before serving to enjoy this no-churn Strawberry Cheesecake Ice cream!
