What is Salmon Wellington
Salmon Wellington or Salmon en Croute is a savory salmon pie where salmon is properly seasoned, then placed over a bed of creamy spinach and wrapped in puff pastry. The puff pastry is brushed with egg wash, then baked in the oven until golden. Spinach and salmon is a match made in heaven, and when it’s wrapped in buttery and flaky puff pastry, it gets even better!

Puff pastry – I used ready store-bought puff pastry but you can, of course, make your own. If it’s frozen, make sure you thaw it in the fridge overnight.Salmon fillets – if frozen then thaw them completely before cooking.Butter, cream cheese, parmesan cheese, and an egg for the egg wash.Onion, garlic, and baby spinach leaves.Dried breadcrumbs, salt, and pepper.

How to Make Ahead, and Store.
Make ahead: You can make these salmon wellingtons ahead of time, and place them in the freezer for up to 3 months. Take out of the freezer and bake for 40 minutes at 200°C (390°F).Store: Store in the fridge in an airtight container for up to 3 days.To reheat: Reheat in the oven at 180°C (356°F) for 10-15 minutes, or until warmed through. Or reheat in the microwave, however, puff pastry has a better texture if reheated in the oven.
What to Serve Salmon Wellington With?
Serve with steamed veg on the side; broccolini (tenderstem), broccoli, or green beans.A side of potatoes is also great with salmon wellington, try scalloped potatoes, smothered potatoes, or mashed potatoes.Or go with a side salad that is simple enough for this dish, I like this simple tossed green salad, this delicious kale salad, or a roasted cauliflower salad.
