If you love the flavors of a classic Reuben Sandwich, you will love this amazing hot Reuben Dip recipe. This hot Reuben Dip recipe, comes from my sweet neighbor, and is perfect for St. Patrick’s Day. Though my dear mom loved a great Reuben Sandwich year round and probably would have dug into this dip any time it was put out. If you share her love of sauerkraut and corned beef, you are going to totally dig on this amazing dip. My neighbor’s rendition of it is done in the crockpot, but if you don’t have a small slow cooker, you can just as easily do it up in the oven.
How to Make Reuben Dip in the Oven
This recipe can be made in the oven or the crockpot and you will find instructions for both in the recipe card. I prefer baked Reuben Dip, because it is only 25 minutes in the oven.
Five Ingredient Hot Reuben Dip
You read that right. This delicious appetizer recipe is only five ingredients! It simply could not be easier.
Mayonnaise: You can lighten this recipe by using low fat mayonnaise and it will still work perfectly. Thousand Island Dressing: Russian Dressing would also work here. Sauerkraut: Be sure to drain this well. I actually like to even squeeze out a bit of the moisture. Swiss Cheese: Naturally, you could use another cheese here, but Swiss is really the choice to get that classic Reuben taste. Corned Beef: I think it works easiest to just buy corned beef from the deli counter and cut it up, but you could also use left over corned beef. Pastrami would also work here.
What to Serve with Reuben Dip
This recipe would be great with any hearty cracker. I served it with Ritz crackers. This would also be amazing with rye crackers, rye chips, or small slices of rye bread or pumpernickel. If you want to dip rather than spread, you may want to consider toasting your rye bread so it holds up to this delicious and hearty dip. For this recipe you will need a small 1 1/2 quart crock pot. It will seem like all of your ingredients aren’t going to fit in there, but they are. You will be fine. And so will your dip.
