Soak Chickpeas overnite and cook with a tea bag to get a suitable color. Alternatively add a pinch of salt + sugar while cooking Chickpeas. This process will require soaking only for 4 hours … I have used boiled chickpeas here. Chop tomatoes finely along with green chilly. Heat oil in a Kadai and drop in Cumin Seeds & Ajwain Seeds. Once they splutter, add in chopped tomatoes, green chill and ginger garlic paste. Stir them well and cover the kadai with a lid inorder to avoid splashing . Stir in Gram flour and give it a good mix. Add all the powdered spices - Chole , Chat Masala , Red Chilli Powder, Amchur , Coriander, Turmeric powder & salt. Stir them well and cook for 2 more minutes. Stir in the cooked Chickpeas , ensuring all the masalas get mixed well with the chickpeas. Pour a glass of water and cook for 5 minutes, making sure to give a good stir occasionally. Turn of the gas and pour the prepared Chole into the serving bowl. Garnish with chopped coriander leaves and onion rings.
KITCHEN NOTES: Omit the garlic and it can be an ideal dish for no onion no garlic cooking! Cheers
