Mojitos are one of my very favorite cocktails, and I could do endless twists on them. The simple addition of pineapple juice in this mojito makes for a fantastic addition. You will love this refreshing and simple cocktail. It is great on a hot summer day, and in the winter it will feel like a quick little escape.
Homemade Simple Syrup
I have my own recipe for how to make simple syrup. It is just as the name implies: simple. Since you just need sugar and water, I think it is totally worth making at home and keeping a batch in the refrigerator. If you don’t, just pick some up at the store when you buy your rum and mint leaves! They sell it with the alcohol.
Mint leaves: Fresh mint leaves are key for a mojito. By muddling them, their oils are released which add flavor and aroma to the cocktail. Lime juice: Freshly squeezed lime juice is always best for cocktails. Pineapple juice: Adds the pineapple flavor. Simple syrup: Gives the drink just enough sweetness to balance the tartness of the other ingredients and blends into the cold liquid of the drink better than granulated sugar. Light rum: My favorite unflavored white rum to use in cocktails is Bacardi. To make this cocktail like a combination of a Piña Colada and a mojito, use coconut rum like Malibu. Club soda: Adds the bubbles to the cocktail. Be sure to use fresh club soda so it is nice and fizzy. I like to keep small bottles in my pantry so I always have fresh soda for cocktails.
