This is my take on the classic winter Pimm’s Cup cocktail (as opposed to the summer version, more on that below). It doesn’t feature the familiar Pimm’s liqueur we all know; instead, it’s crafted with the lesser-known Pimm’s No. 3 Brandy Slinger. While Pimm’s No.1 cup is gin-based (ideal for summer), No.3 takes on a brandy base, offering a richer profile suited for the cold winter months.  As Pimm’s No. 3 is more challenging to find, I recommend using the original Pimm’s for this recipe. The tasting notes/flavor profile includes citrus and fruity notes. In keeping with this theme, I’ve created my own new recipe for a Pimm’s Strawberry Mint Cocktail, based on the classic drink, offering a refreshing summer twist. While Pimm’s No.1 cup is gin-based (ideal for summer), No.3 takes on a brandy base, offering a richer profile suited for the cold winter months. 

Pimm’s Varieties

Over the years, there have been many Pimm’s varieties that have been used to create classic cocktails. Since most are no longer available, it is common to make all Pimm’s Cup cocktails with No. 1. In addition to the most popular No. 1, there have been Pimm’s varieties all the way up to No.6. 

Pimm’s No. 1 – Gin-based liqueur (used for summer fruit cups like the traditional Pimm’s No.1 cup, made with lemonade or ginger ale served in a highball glass) Pimm’s No. 2 – Scotch whiskey Pimm’s No. 3 – Brandy (traditionally used for the winter cup but not available anymore) Pimm’s No. 4 – Rum Pimm’s No. 5 – Rye whiskey Pimm’s No. 6 – Vodka

Pimm’s History

James Pimm (the original Mr Pimm) was a British fish monger who invented the liqueur to make drinks to pair with his seafood. This Pimm’s winter cup starts with good apple juice warmed and infused with orange, cinnamon, caramel. This aromatic infusion is then mixed with Pimm’s and served warm for a hot toddy that will warm you inside, when it’s cold outside.
