Alternatively, add them all to a food processor and process them until they combine well. STRAWBERRY CHEESECAKE FILLING This layer is made with fresh strawberry puree, cream, cream cheese, white sugar, and vanilla. To make the Strawberry Puree filling, add strawberry puree, sugar, lemon, and corn starch to a pan. Cook over medium heat until the mixture reduces to half. You will see the berry puree coats the spatula well. Whip the Double cream into a soft peak. Next, add cream cheese, strawberry puree, vanilla extract, and icing sugar. Fold into the cream cheese mixture, gently so that the cream is airy and doesn’t deflate. ASSEMBLY Divide the biscuit crumbs between 5-6 mason jars, reserving some buttery filling for topping. Spoon the cheesecake filling on top of the crust layer, filling up nearly three-quarters of the jar. Finally, add some strawberry puree, fresh strawberries, and a pinch of biscuit crumble. Chill in the refrigerator until you are ready to serve. They are perfect to enjoy for every occasion - Christmas, Thanksgiving, Valentine’s day, or even everyday celebrations.

Tips to make the Best Strawberry Cheesecake Jars

Make sure the cream is cold. Whip the cream with an electric hand mixer or in a stand mixer until you achieve a soft peak. Do cook the strawberry puree until you have the right consistency. This makes a huge difference in the flavours. Keep the serving jars or glasses ready for assembly, to speed up the process.
