Combine sugar, milk, and butter in a saucepan. Bring to a raging boil while stirring constantly so it doesn’t burn.Boil for one minute. This is a very important step. Use a timer to make sure it has been a full 60 seconds, and do not start the timer until you see a full roaring boil.Combine oats, cookie butter, and vanilla. Remove it from the heat and stir in the rest of your ingredients moving somewhat quickly.Form into cookies. Scoop large spoonfuls of the mixture onto a baking sheet with wax paper while the mixture is still hot. Allow to cool completely.
Line a baking sheet with wax paper (or just use the sheet you used while making them).Line the tray with the cookies.Put it in the freezer for a half hour to an hour. Then, take them out and transfer them to a freezer-safe bag or container, stacking them.Return to the freezer and freeze for up to three months. These thaw quickly and need very little time out of the freezer before being ready to eat.
