So often I get requests from readers for more chicken recipes. I totally get it too, no one wants to eat the same chicken recipes over and over again, yet chicken is such a great way to feed your family. If you too need another chicken recipe to wow your family, this Melt In Your Mouth Chicken recipe is perfect. The sauce is made with just a few ingredients and smothers the chicken as it bakes. The result is delicious and perfect for feeding a hungry crowd.
Seasonings
Many Melt In Your Mouth Chicken recipes call for seasoning salt. What I really love about this recipe is that we are using seasonings typically found in seasoning salt, but not actually using seasoning salt. There are a few great things this does. First, it allows anyone who isn’t able to locate seasoning salt to still make this recipe. Second, it allows you to control the sodium in the recipe. If you are on a low sodium diet, you can cut out the salt completely but you still retain the other seasonings. Finally, you can change this up completely. Instead of the seasonings listed you could add little bit of salt and something like my Italian Seasoning.
Make the sauce. While your oven preheats, whisk together the mayonnaise, sour cream, Parmesan, and seasonings in a small bowl. Taste the sauce and add more salt or pepper to taste. Put the mixture on the chicken. Spread the mixture over the chicken breasts and place them in the prepared baking dish. Bake the chicken. Bake for 25 to 30 minutes or until the chicken registers 165 degrees Fahrenheit.
How Long to Bake Chicken
Chicken is considered fully cooked when the internal temperature reaches 165 degrees Fahrenheit. While I give you a time frame on how long the chicken takes to bake, the best way to know exactly when the chicken is done without being overcooked is to use an instant-read meat thermometer.
Low Carb and Gluten Free
You will notice that this recipe is both low carb and gluten free, two categories of recipes that I get requests for all the time.
Low carb: This delicious recipe has only 6 grams of carbs and would be perfectly rounded out with some roasted broccoli and mashed cauliflower. Gluten free: You will notice that this chicken dinner is naturally gluten free. As with all recipes, you will want to double check all of your ingredients to ensure they are gluten free.
Storing and Reheating Leftovers
Store any leftover chicken in an airtight container in the refrigerator for up to three days. Always use your best discretion with leftovers. Reheat leftovers in the microwave or in the oven until heated through.
