INGREDIENTS YOU’LL NEED
To get started you will need the following ingredients WHITE RICE WATER OR VEGETABLE STOCK OLIVE OIL ONION RED PEPPER JALAPENOS GARLIC CRUSHED TOMATOES CILANTRO or CORIANDER CUMIN POWDER SALT GREEN PEAS Gather all the ingredients in one place. It is really quick to make them in your Instant Pot pressure cooker.

TIPS TO REMEMBER to make this AUTHENTIC Mexican Rice
- Rice needs to washed and rinsed at least 6 times in running cold water and set it aside.2. Tomatoes does stick to the bottom of the pan. { I have learnt this after making Mexican Rice in my pressure cooker before } SO the key thing is DO NOT STIR THE TOMATOES ! 3. Water to Rice Ratio is important to get it right.4. Type of Rice - To make this Rice Recipe in Instant Pot, I have used White Basmati Rice. You can make them with any other Long Grain Rice but please remember to use the right proportion of water.
