STRAWBERRY SYRUP FOR BELLINIS
Traditional Bellinis are a champagne cocktail that combines the sparkling alcohol with peach nectar. This recipe is just like that, only I make it with strawberry syrup. YUM! The sweet syrup is really easy to make with only three ingredients! Just combine ripe strawberries, sugar and water in a sauce pan and boil while stirring constantly. Then let it cool. I love the idea of setting it out in a pretty dressing container with a bottle of champagne and let guests mix their own cocktails. It takes very little effort and looks beautiful on a brunch table.
TIPS FOR PERFECTLY PRETTY STRAWBERRY BELLINIS
Pick your favorite champagne for this cocktail. I like to use a sparkling Moscato. If you like a clearer strawberry syrup, remove the whole strawberries after boiling for a few minutes and let the simple syrup cool completely. For a more dense syrup with more strawberry flavor, mash the berries up in the sugar water and boil it for about three more minutes. Then blend it all up in a blender and cool before adding it to the champagne. If you want this cocktail to be extra pretty, you are going to want to use a cheese cloth to strain the strawberry syrup so you remove every last fiber and seed. I like the fuller strawberry flavor so I kept it all in and blended it together. The champagne and berry mixture won’t blend together naturally, so if you or your guests want it mixed together, stir gently so you don’t stir out all those delicious bubbles of the champagne. You can make these pretty drinks non-alcoholic if you like. Just add club soda or lemon lime soda to the simple strawberry syrup. Delish!
