About my Halloumi fajita traybake recipe
I love easy dinner options and these fajita veggies with halloumi are my favourite fillings to make on busy days. While these are being made in the oven, I like to quickly whip chunky guacamole with avocado and prep the remaining elements. Then its just the case of assembling my fajitas. The recipe is super simple. Simply toss peppers, onions, and halloumi cheese with your favorite seasoning spice , then bake until the vegetables are crunchy and the halloumi cheese is crispy. Tuck it into tortilla wraps or use in tacos, Buddha bowls, burritos, quesadillas, pasta, and more!

Place the oven proof dish into the oven and bake for 20-25 minutes until the peppers are crunchy and the halloumi is golden. Load up Tortillas and add toppings: Once the halloumi fajita mixture is perfectly cooked, assemble your fajitas. Warm the corn tortillas or tortilla wraps in the microwave for a few seconds or on a skillet. Spoon the fajita halloumi and veggies onto the warm tortillas, distributing them evenly. I like to add shredded lettuce, dollops of sour cream, guacamole, jalapeños and a sprinkle of fresh cilantro. And finally serve with lime wedges. For added protein, toss in tofu, more halloumi cheese, or paneer. To enhance the texture and flavour of your fajita mixture, add black beans, kidneybeans or chickpeas to the fajita mixture. Known for its salty taste and high melting point, it’s ideal for grilling or frying while retaining its shape. We add it into sandwiches, salads, fries, or enjoy it on its own.
Leftovers & Storing
To store leftover veggie and halloumi fajitas mixture , place them in a covered airtight container and store them in the fridge for up to 3-4 days.
