These Vegetarian Puff Pastry Sausage Rolls are an absolute must for the festive season! I can’t believe I haven’t shared this recipe sooner—it’s a family favourite, perfect for Christmas parties, Halloween, or birthdays. They’re so easy to make with store-bought puff pastry dough or homemade puff pastry, and your favorite veggie or vegan sausages. My daughter is obsessed with Greggs’ vegan sausage rolls (and she’s keen to try Wenzel’s next!). But let me tell you, making your own with a tasty sausage mix at home is healthier and just as delicious. These sausage rolls are always a hit— Simply wrap your vegetarian sausages in a puff pastry blanket, and bake / air fry until they turn beautifully golden brown. How to make Vegetarian Sausage rolls step by step?
Prep the Pastry: Unroll the puff pastry dough and cut into strips. Place the sausages at one end, roll them up, and seal the edges. Slice and Brush: Cut into equal portions, brush with the remaining egg or milk, and sprinkle sesame seeds if desired. Bake: Arrange on a baking tray lined with parchment paper and bake at 180°C for 20 minutes until golden brown, or air fry for 12-15 minutes.
Prepare the puff pastry
Unroll the puff pastry sheet, leaving the backing sheet on. Cut the puff pastry horizontally across. Line the sausages on one end of the pastry rectangle. Roll until they have completely wrapped over. Press the pastry ends to seal the edges.
Slice and Brish
Brush with the remaining egg or milk, and sprinkle sesame seeds if desired. Cut into equal portions of bite sized sausage rolls. Repeat the process with the remaining puff pastry.
Oven Bake the sausage rolls
Arrange on a baking tray lined with parchment paper and bake at 200°C for 20 minutes until golden brown.

Making sausage rolls in the air fryer couldn’t be easier! Just wrap your vegetarian sausages in puff pastry, brush with milk or the remaining egg, and slice into mini sausage rolls. Sprinkle with sesame seeds for extra crunch. Pop the rolls into your air fryer basket and air fry at 190°C for 12-15 minutes until golden and crispy. Once they have frozen, place them in the freezer-safe bags. To cook, simply apply egg wash and bake from frozen in the oven. Baked sausage rolls - Once cooled, place them in freezer-safe bags and freeze until ready to enjoy. To reheat, place the frozen sausage rolls in the air fryer/oven and cook until done.
