About my easy Tofu Bhurji
In just 30 minutes or less, you can make delicious Indian tofu scramble. This recipe is super simple to make just like my paneer bhurji recipe (Indian cottage cheese) . It make 3-4 portions, so I always store one portion of leftover for my quick lunch option. Start with a quick Indian spiced onion tomato masala. Then add some peppers, and crumbled tofu. Cook for a few minutes, garnish with fresh coriander leaves and serve. Enjoy for breakfast, lunch or dinner with your favourite wine. I like to serve this protein rich meal on a sourdough toasted bread and avocado and a glass of Barefoot Moscato wine. They are delicious with naan bread or rice too - depending upon the meal you are going to serve.
Easy tofu bhurji recipe below
Add the diced onion, garlic, green chilli(if using any) and cook for 3-4 minutes, until translucent. Next add the diced tomatoes, spices and cook for another 4-5 minutes until the masala comes together really well. If needed add a splash of water. Then add the diced peppers and tofu and cook for a further of 7-8 minutes. Switch off the flame. Finish by adding a sprinkle of garam masala, lemon juice and garnish of coriander leaves. If you want your scramble on the dry side, cook for long. If you like it on the wet side, cook briefly. Adding Turmeric powder is more than just the color in the scrambled tofu. It resembles the scrambled egg.
Optional add ins
You can add in vegetables like frozen green peas, sweet corn or chopped spinach.
Leftovers Tofu Bhurji
Store any leftover tofu scramble in the fridge in air tight containers for at least 5 days. Reheat: To reheat, add them to a frying pan and cook until heated thoroughly. If needed, add a splash of water. Alternatively, reheat in the microwave. I don’t recommend freezing the Indian tofu scramble - the texture might not be the same. If you are serving for lunch / dinner - serve the tofu scramble with a tarka dal, roti / steamed rice and cucumber raita. Use any leftovers to make a delicious tofu scramble sandwich with this stuffing. They make a fantastic lunch / school dinner option.
What to drink with Spicy tofu scramble?
Aromatic white wine, such as Moscato wine from Barefoot is the best choice to go with the spicy Indian tofu scramble . A Chardonnay would also work quite well. According to Jennifer Wall, the winemaker at Barefoot: " Barefoot California Moscato’s expressive and fruity notes complement the bold spices of the tofu, adding a delightful sweetness that balances the dish’s intensity and heat. With each sip, the Moscato accentuates the exotic flavours, creating a delightful harmony that celebrates the fusion of Indian cuisine and Moscato’s refreshing profile" I don’t recommend pairing red wine with this scramble but a fruity rosé would work ok.
Can I freeze Tofu scramble?
I do not recommend freezing the scramble. The texture will change.
How much tofu is one egg?
1 egg is as much as 100g tofu. They are both healthy with comparable calories while tofu has slightly more protein.
