Buttermilk: You might be wondering if using buttermilk is a must? I will answer your question. Buttermilk contains acid that activates the baking soda to make fluffier waffles, it also adds a little acidic flavor to the waffles. I also noticed that buttermilk creates firmer and thicker waffles, but if you need to substitute it with something else, this recipe works with whole milk and half a teaspoon of lemon juice. Flour: We’re using all purpose flour in this recipe. Eggs: The eggs will make the waffles richer, flavorful, and fluffier. Baking Soda and Baking Powder: The mixture of the 2 leaveners will make your waffles light and airy, exactly what you want! Butter: Melt butter in the microwave, then allow it to cool a little before you add it to the waffle mixture. Vanilla, Salt, and Sugar are all added for flavor. Skip the sugar if you’re making savory waffles.

Recipe Tips

Skip Greasing the Waffle Iron if the coating of the waffle iron is non-stick. If it seems to stick, then spray with baking spray for the FIRST waffle ONLY. Too much oil will make your waffles soggy. Watch the Cooking Time. In my Breville Waffle Iron, the waffles need about 3 minutes to cook through. Different waffle irons may have different baking times, so keep a close eye on the waffles to reach the desired browness. Wire Rack. As you cook the waffles, keep a wire rack next to you to allow the waffles cool, if you stack them on a plate while still super hot they can become soggy from the hot steam coming out of them. Making Waffle Mix

You can make a dry waffle mix to store in your cupboard for quick waffles on weekdays. Combine the dry ingredients (flour, salt, baking powder, baking soda, and sugar if using), store in an airtight container to use later. When ready to use, combine the buttermilk with eggs, pure vanilla extract, and melted butter. Then add the dry ingredients to the wet mixture, whisk and cook according to the recipe card below.

Storing Tips

I recommend eating the waffles hot! If you happen to have leftovers, you can store them in the fridge in an airtight bag for up to 3 days. To freeze, allow the waffles to cool completely then store in a freezer bag with wax paper lined between waffles to prevent them from sticking to each other. Reheat in a toaster or in a 350°F/180°C oven, lightly cover with foil to stop them from drying out and bake for 10 minutes or until warmed through.
