Let’s celebrate Anzac Day with these Anzac Biscuits!!!
EASY ANZAC BISCUITS
I was introduced to these oats biscuits by my neighbor Sarah a few years ago. When I was casually telling her about making cookies with oats, She immediately asked me if I had tried ANZAC biscuits. That was the first time I ever heard. She penned the recipe for me on a piece of paper and we made them immediately.
The recipe comes together in about 30 minutes. It has got only a handful of Ingredients - Flour, Oats, Desiccated Coconut, Sugar, Baking Soda, Golden Syrup, and Water.
First, mix the dry ingredients in a bowl. Now melt the butter, golden syrup in a pan and add the baking soda water mixture. This wet mixture does get frothy. Gradually add the wet mixture into the dry and mix with a wooden spoon.
You can make small balls, and then gently flatten the mixture with your hand. Now place them spaced apart on a greased baking sheet. Bake the biscuits for 8-10 minutes at 160C in a fan-assisted oven.
Alternatively, you can spread the mixture in a tray. Bake the mixture and slice them before they cool down. Sliced Anzac treats are convenient and quicker. They are great to feed a crowd too!
What is Anzac Biscuits?
ANZAC stands for Australia and New Zealand Army Corporation and 25th April is celebrated as ANZAC day every year. The soldier’s wives made these iconic biscuits and sent them to the ANZAC’s serving in Gallipoli during World War 1. Hence these delightful long shelf life biscuits are called ANZAC BISCUITS. As these biscuits took time to reach the soldiers overseas in the early 1900s, they are made with ingredients that will not spoil easily. The eggless biscuits were then stored in Billy Tea Tins, which kept them crisp for months.
Why were eggs not used in Anzac biscuits?
It would take nearly 2 -3 months to reach the serving ANZAC Troops during WW1. So the Australian & New Zealand women had to choose their ingredients wisely. They used Golden syrup to bind the biscuit mixture that will keep them fresh for a few months. Also, Biscuits are never made with eggs - its the cookies! I know so many of us like to try new variations of these iconic biscuits like Anzac Cookies, Anzac Cake. But let me tell you - these Golden Oaty Coconuty Biscuits are still the best!
Golden Syrup Substitute for Anzac Biscuits
My family loves Lyle Golden Syrup on pancakes and porridges, so I always have a bottle of these in my pantry. Golden Syrup is popular in Australia and UK. However for folks around the world, let me tell you, Golden syrup is a light amber color liquid with buttery caramel flavor. You can replace the golden syrup with honey, maple syrup, treacle, or even corn syrup.
Anzac Biscuit dough is falling apart?
Sometimes the biscuit dough does fall apart and this can happen if the mixture is too wet or too dry. When I first made it, the mixture dough was really dry. So I added a little more more melted butter to achieve a nicely rounded biscuits. If you find the mixture sloppy, add a little more flour, coconut or oats. Anzac biscuits has a forgiving recipe and there is room for adjustments. What I also love about these biscuit is that, if you don’t want to shape them, you can place the mixture in a tin, roll it out and slice it for pieces.
