I am a big fan of anything related to dates. I always have them on hand.

Once you make a batch, you don’t have to worry about them expiring. It’s an easy make-ahead treat. A great, healthy, absolutely natural alternative to junk processed snacks. The list of ingredients is quite simple.

Dates Peanut Butter Chocolate Peanuts

Dates

Use Kalmi or Medjool Dates or any other soft date around you. I prefer using something that’sa) soft b) big, so it is easier to stuff c) is not dipped in additional sugar syrup.

Peanut Butter

You can use what you have- crunchy or smooth peanut butter. One thing to remember when using store-bought peanut butter is that the oil rises on the top. It leaves the bottom hard and not really spreadable. I like using Unsweetened peanut butter because the date and chocolate already have enough sugar in them. You can also use homemade peanut butter. That way you can control what goes into it. So, definitely give it a good mix. You can use any nut butter you want. We love the taste of almonds and dates, too. Speaking of Peanut butter, have you ever tried making your peanut butter and Jelly sandwich in the air fryer? It’s a game-changer. You can get rid of your toaster. Really!

Chocolate

Depending on what you like - milk, dark or bitter, choose your chocolate. I prefer using dark chocolate, but if you are making it for kids, use milk chocolates. A super dark or sugarless(not “sugar-free” but without any sugar) chocolate will also work here, especially because the dates are quite sweet by themselves. When dipping, some chocolates(especially the good quality ones) do not melt to a smooth, flowy texture. If that happens to you, add ¼ teaspoon of coconut oil. Mix it up with the hot chocolate. Not only will it make the chocolate coating easier, it will also keep the chocolate covering thin.

Peanuts

I have used store-bought, lightly salted skinless peanuts here. You can use unsalted peanuts, too, but I like the contrast a little salt brings to these chocolate-covered dates. Or you could roast your peanuts in the air fryer too. The roasting is not only effortless, its also very uniform. If you are using crunchy peanut butter, you can skip this ingredient. You can totally omit this ingredient if you do not like crunch in your sweet treats.

How to make Dates Snickers

I have two methods to stuff the dates. The first method is the spoon method. It works best when you have no patience and are just making a couple of stuffed dates. The second method for filing is using a piping bag. Though this method has one extra step of filling the piping bag, it is more efficient when making a lot of these stuffed dates.

Step 1 - Prep

Lets start with the Prep work. You want to chop up the chocolate so it can melt evenly. Plus, crush or chop up some roasted peanuts. Make an incision in the middle of the date; lengthwise, remove the date seed. Make sure to keep the bottom bit of the date intact.

Step 2 - Stuffing the Dates

Either using a piping bag/ zip lock bag or a regular spoon, stuff the sliced date with creamy peanut butter. Use the piping bag method if you are making more than 3-4 dates. Even though its an extra step, the piping bag makes it super easy to fill up the dates. You want to add about a spoonful of peanut butter to the date. Add some crushed peanuts on top. Skewer the date with a toothpick. This will not only help in keeping it together but also in dipping AND eating! Try and skewer it on the bottom half of the date. That way, your filling will not ooze out.

Step 3 : Melt the Chocolate

Heat your chopped chocolate in a microwave-safe bowl , and heat the chocolate for 2 minutes in 30-second intervals. Between each 30 seconds, mix the chocolate with a spoon. We do this so that the chocolate doesn’t get burnt. After 2 minutes, if the chocolate isn’t flowy, add ¼ teaspoon of coconut oil to the melted chocolate. Do not add too much; otherwise, the chocolate-covered date will melt at room temperature. You can do the same process on a double boiler too. Or you can heat a pot of water and keep a heatproof bowl with chocolate over it.

Step 4: Dip the Stuffed Date

Adjust the toothpick in such a way that you can hold it. I like to keep one end short while dipping it in. Now, either dip the date in the chocolate completely or use a spoon to drizzle the chocolate on top. Shake off the excess chocolate and place the chocolate-covered date on a parchment paper. Add crushed peanuts on top, and your snicker dates are ready!

Substitutions

These date Snickers are Vegan, gluten-free & Plant Based. They are also Paleo and whole 30 approved. If you are allergic to peanuts, you can easily use any Nut or Seed butter - Almond butter, cashew butter, & Pistachio butter being my top options.

Variations

Let your imagination fly with the variations!

Nut & Nut Butters- You can add a whole almond in the middle of the date or any other nuts you choose. As explained on top, you can use nut or seed butter like almond butter or sunflower seed butter in making this, too. Kid friendly - This date snickers recipe is a definite hit with kids. Oh and this is also a great recipe to make with kids. I would set out a couple of options so that the kids can add a lot of different toppings and fillings! Chocolate Drizzled Stuffed Dates - If you do not want to dip the whole date into chocolate, you can just drizzle some melted chocolate on top. Doing this makes the whole process easier plus makes a lighter snack White Chocolate - You can also dip the dates in melted white chocolate. I would definitely do this if my nut of choice was pistachio. That gorgeous green nut butter would look so great against the white chocolate!

Storage

You can store these in an airtight container at the counter for a couple of months. If you live in a hot place, I would suggest refrigerating these date snickers. In the refrigerator, these dates snickers can last for 4-5 months. These ingredients can last long on the counter and do not need to be frozen.
