Storing and Reheating Leftovers
Enjoy your cooked sweet potatoes all week! Once they are fully cooked, allow them to cool and store them in an airtight container in the refrigerator for up to four days. Reheat them in the microwave (be sure to take the foil off) or in the oven until heated through. Though making sweet potatoes in the oven is perfectly easy, I love using my slow cooker as it frees up oven space for other things or for the times I just don’t want to turn on the whole oven for a few potatoes. This is a quick way to prep potatoes.
Smooth skin: Look for sweet potatoes that have smooth skin and no blemishes or soft spots. Medium-sized: Choose sweet potatoes that are medium-sized and similar in size. This will help ensure that their thickest parts will cook consistently and they will be done at the same time. Store them in a cool dark place: Do not store your sweet potatoes in the refrigerator and avoid keeping them in a place that collects moisture. Don’t buy them more than two weeks in advance: Sweet potatoes can be stored for two to three weeks in your pantry.
Three to four hours on high. Six to eight hours on low. It may take longer for large sweet potatoes.
The sweet potatoes you see in the photos were on the small side of medium and they cooked perfectly in three and a half hours.
Filling and healthy, top your sweet potato with your favorite taco meat and toppings like in my Taco Stuffed Sweet Potatoes. Skip the bun and put Homemade Sloppy Joes meat on your potato. Make it sweet: butter, brown sugar, maple syrup, and cinnamon. Make it savory: Sour cream (or plain Greek yogurt), green onions, and chives.
