Usually, they’re sold dried. Fresh, refrigerated rice noodles are easy to find at Asian supermarkets too. Peanut Butter: Choose creamy peanut butter for a smooth peanut sauce, or chunky peanut butter if you want extra texture. Coconut Milk: Canned coconut milk makes the peanut sauce rich, thick, and creamy! Garlic and Ginger: Use fresh garlic and ginger to add the most flavor. Mince the garlic finely, and grate the ginger using a microplane or the smallest holes on your box grater. Soy Sauce: Choose low-sodium soy sauce if you want to keep the salt low. Tamari can also be used if you want this recipe to be gluten-free. Honey: To balance the saltiness, a bit of honey is perfect. You can also use brown sugar or another sweetener if you prefer.
