I love international cuisines and have incorporated foods from all around the world in my regular menu. This includes a Mexican dish that became one of my favourites since the day I tried it for the first time when I was a child. The best thing about it was adding all the sauces to either chicken, meat or shrimp before wrapping it in a special bread, with sweet bell peppers, lots of melty cheese and enjoying all the wonderful flavours. Although my Mexican friend keeps explaining to me that fajita is not Mexican but actually a Tex-Mex food, it somehow got imprinted in my mind that fajita is a Mexican dish. Moreover, every time we got invited to her place, she’d cook fajitas, quesadillas or arracheras. No matter the origin, they all taste so good. I like experimenting with different recipes, so I make fajitas with different meats, I add various sauces, I change the spice mixes, and recently I even discovered a way to still add a generous amount of cheese to my fajitas but without the added fats and calories. And since I’m also a huge fan of quesadillas, so I thought why not combine both recipes and make one amazing dish? But now, back to the cheese. I really love my fajitas and quesadillas with lots of cheese. This always counted for many extra calories. All you need to make this recipe is onion, bell peppers, paprika, chicken breast, fajita spice mix, tortilla breads and grated cheddar cheese. Start by sautéing onion and bell peppers with some paprika, and set aside. Cook the chicken with fajita spice mix, and set aside. Wipe clean the skillet, then place a tortilla bread on the skillet. Sprinkle with cheese then peppers followed by the chicken, then sprinkle generously with cheese again. Finally, cover with another tortilla bread. Cook on medium heat for a minute or two or until the bottom tortilla is slightly browned. Flip over and let the other side brown. Transfer to a plate and using a pizza cutter slice each fajita-quesadilla into quarters. Serve warm and enjoy! © Little Sunny Kitchen
