Aren’t they so cute? They had just gotten engaged. My mom told me that she was on the phone in her mother’s kitchen calling people to tell them the news. There were lots of comments saying this looks just like Eric and Nikki, my two oldest siblings, but my cousin Aaron said, “That is Karen on the phone!” And I said, “Really Aaron? I was thinking Nikki. But then again I have been known to see old photos and think to myself, ‘Why was I wearing such an ugly shirt?’ then I realize it’s Nikki not me.” She responded with, “Karen I have evidence of your clothing choices and will share some examples:” Yes Nikki. You DO win. There is no way I will ever be able to live down that Bumblebee themed dance costume. Or the dalmatian-collared sweatshirt paired with floral-lined overalls. Mom, where were you?? Although really the problem is that she’s here with me now looking at the pictures (still recovering from surgery) and she said, “The overalls and dalmatian sweater look like they’re a set. Right?” No mom. No.
Okay, I apologize. No one came here to see my prepubescent self making bad fashion choices. Have some frittata.
Frittata is one of my favorite breakfast-for-dinners. It is just so easy to clean out the fridge and throw whatever you find in with some eggs and cheese. I love this broccoli ham cheddar version. They are just the greatest combo! The best part is that the cheese is left in cubes instead of shredded; this way you get actual pockets of cheesy perfection, like you can see here: Let me know if you make this frittata!
