Make a large jar of it, and keep it in your fridge or freeze in ice cube trays to have on hand whenever you need it! Green seasoning is a marinade, a paste, or a sauce and as you can see it’s super green! It’s made with very fresh ingredients, and it’s perfect for marinating your meat, fish, and chicken. Just like the importance of pesto to the Italians, green seasoning is a staple in every Caribbean kitchen. However, it may slightly differ from one island to another, or one area to another. This recipe includes most ingredients that can be easily found in the US or the UK.

Parsley Cilantro Basil Shallots Green onion Thyme Garlic Ginger Scotch bonnet or pimento peppers Lemon juice

How to Make Green Seasoning?

Simply place all of the ingredients in a food processor, and blitz until you get a paste.

How to Store Green Seasoning?

I usually store green seasoning in a glass jar in the fridge for up to 5 days until I’m ready to use it. Or freeze in ice cube trays and thaw before using. Once frozen, pop into a freezer bag and freeze for up to 3 months. The jars that I use are these small Weck jars and Ball jars.

How Much Green Seasoning to Use?

Start with 1 tbsp (but it also depends on the amount of the food that you’re making), and then see if you need more. If you’re using scotch bonnet peppers, then watch out how much green seasoning you use as the food might turn out quite spicy. Other seasoning recipes that you might like:
