About this recipe for Ground Green Cardamom
Ground Cardamom, also known as Cardamom Powder, is a versatile spice with a unique blend of sweet, spicy, and citrusy notes. I love using this fragrant spice in my Indian cooking be it sweet dishes, savory dishes, baking, spice blends and Indian masala chai. This homemade Ground Cardamom is a must-have ingredient in my kitchen, making my festive cooking so easy. Whether you decide to make it in small batches or a large quantities - the method is just the same. Making my own Homemade Cardamom Powder is a breeze and requires just one ingredient – whole green cardamom pods. By grinding the cardamom seeds, I have complete control over the consistency of my powder, whether I want it fine or coarse. And, by making it at home, I eliminate any presence of husk or stems often found in store-bought varieties. So, why settle for store-bought Cardamom powder when you can make it at home with ease?
What is cardamom?
Cardamom pods are the dried fruit capsules of the cardamom plant, which is native to India. Green or brown cardamom pods hold small, black seeds that serve as a spice. People widely use whole and ground cardamom in cooking. The flavour of cardamom is complex and aromatic, with hints of lemon, mint, and eucalyptus.
Ingredients
I’ll be using just one ingredient for this recipe - Green Cardamom pods. These pods come in two sizes, Jumbo and Regular. Personally, I prefer the Jumbo pods as they contain a lot more seeds. This makes the resulting cardamom powder more flavourful and aromatic. Whole cardamom pods are available in most grocery store near you like Tesco, Sainsburys, Asda, Morrisons and Waitrose. Or you can easily find them in Asian stores.
How to make Cardamom Powder at home step by step?
To make ground cardamom, start by placing whole green cardamom pods on a plate. Quickly heat them in the microwave in 15-second bursts, repeating until they’re warm to the touch. About 1 to 1 ½ minutes. This step is optional. But it really helps in cracking the pods easily. Let the cardamom cool, then extract the seeds from the pods. Finally, grind the seeds in a coffee or spice grinder until finely ground. Store the ground cardamom in an airtight container for up to three to four months for optimal flavour.
How to make Cardamom Powder with whole cardamom pods?
In this method, the cardamom shell and the seeds are blended to together to a fine powder.

Storing homemade cardamom powder
To store ground cardamom, keep it in an airtight container, such as a glass jar or plastic container, in a cool, dark place away from heat and light. Use within 3 to 4 months for the best flavor. If you still have leftover cardamom after that, you can use it, although the flavor may have reduced a bit.

Yes, you can substitute ground cardamom for cardamom seeds in recipes. One teaspoon of ground cardamom for every 3 teaspoons of seeds. I would ideally use ¼ teaspoon - ½ teaspoon of cardamom powder in my curries.
