What tastes best with buffalo sauce? Blue cheese and celery of course! And this burger has it all! This trifecta of flavors is a taste-sensation for your tastebuds. For me, it is mandatory that buffalo anything be served with celery and blue cheese. To start, buffalo sauce is mixed into the burger meat. Then, to cool your palette, a crispy coleslaw with celery mixed with blue cheese dressing, PLUS, extra blue cheese for good measure (which never hurts). Blue cheese dressing is an easy and tasty sauce for coleslaw. If you like to make your own (as I do, and it’ sooooo simple to make), try my Chunky Blue Cheese Dressing. To make easy work of the coleslaw (if my store has it) I buy pre-shredded cabbage and add my own sliced celery. The celery adds a lovely fresh flavor and needed crunch. The blue cheese coleslaw has more uses than just this burger. I love it on top of Slow Roasted Pulled Pork Sandwiches, as a side dish for Ribs, or Buffalo Rosemary Chicken Skewers.
I typically don’t mix anything with my burger meat unless it’s to flavor the meat. This is the case with my Chipotle Chicken Burger and Caramelized Red Pepper & Onion Burger. I primarily use beef for these burgers, but ground turkey or chicken would also be delicious if that’s your preference. You can make my chunky blue cheese dressing or use any of your favorite.
