This Buffalo Chicken Sandwich is a recipe that was first posted in 2013 as a panini. I’ve updated the recipe, made it a little more simple, and switched from a panini to a grilled cheese sandwich, though it is absolutely delicious as both. You will love this simple and delicious recipe!
Prepare the bread. Spread butter on one side of each piece of bread. Mix the chicken filling. Stir together the shredded chicken, mozzarella, Buffalo sauce, and blue cheese. Put the sandwiches together. Place two pieces of bread, buttered side down, in the hot skillet. Top each piece of bread with half of the cheese and chicken mixture and then the remaining slices of bread, buttered side up. Cook the sandwiches. Cover and cook the sandwiches for three minutes. Flip the sandwich and cook for three more minutes.
