What Dough to Use
I have made these with crescent roll dough, puff pastry, and pizza dough. My favorite by far was the crescent roll dough. It works best with the filling and it becomes deliciously flakey. The dough you see pictured in these step by step photos is the puff pastry, but it is the same process with the pizza dough or the crescent roll dough.
Keeping Chicken on Hand
I love keeping bags of frozen chicken in my freezer for recipes like this. This recipe only calls for a very small amount of cooked chicken, so having that bag handy and being able to pull out just 1/2 a cup is perfect. Buffalo Sauce for Chicken Pinwheels
It is very easy to find bottles of Buffalo sauce in grocery stores in the United States. Any store-bought Buffalo sauce will work well in this recipe. If you are overseas or you would like to make your own, you can use my Homemade Buffalo Sauce. Keep in mind that this sauce recipe makes just under one cup. You may want to cut the recipe in half.
Shredding Cheese
As with any recipe where cheese plays a major roll, these pinwheels are best when you shred your own cheese from a block. It melts so much better than pre-shredded cheese that you buy in bags. It is worth the extra few minutes that it takes.
