Don’t forget to check out the extensive Meal Plan ideas.  For extra crispy Bombay potatoes, I like to add some rice flour or chickpea flour to the mix just like our crispy Air fryer onion bhajis or Air fryer potato slices. But this is optional. This recipe is incredibly versatile and can be made using different cooking methods such as stovetop, oven, or air fryer, depending on your preference. Serve homemade Bombay aloo with naan bread or vegetable pulao rice and tarka dal, kachumber salad and raita for a delicious Indian meal in a jiffy.

Potatoes - any variety will work, but new potatoes are a great option as they don’t need to be diced or peeled. Garlic - adds a punch of flavour to the dish, especially since we’re not using onion or tomato.I prefer using garlic clove instead of garlic powder. Oil -any neutral-flavoured oil will do, such as vegetable oil or sunflower oil Spices - I use a combination of turmeric, coriander, cumin seeds, Kashmiri chilli powder, and garam masala is perfect. Feel free to change it up or adjust the spices to your liking. Salt - to taste. Lemon or lime - adds fresh flavors to the Bombay potato. Fresh coriander leaves - for garnishing and added flavour.

Storing and Reheating leftover Bombay potatoes

In the Fridge: Store leftover Bombay Potatoes in an airtight container in the fridge for 3-4 days. To reheat: Warm the potatoes in a skillet, oven, or air fryer. Microwave the potatoes first, then crisp them in a pan, or place them in the air fryer basket at 180°C for 4-5 minutes.In the Freezer: To freeze, let the Bombay Aloo cool completely and store in a freezer-safe container or Ziploc bag. They will keep for 2-3 months. Thaw in the fridge overnight or at room temperature for 1-2 hours before reheating.

Prepare the Tempering & combine potatoes with spices: 

Heat vegetable oil in a pan over high heat. When hot, add the cumin seeds and allow them to splutter. Then, add the garlic and sauté for another 2 minutes.PS: You can skip the cumin seeds if you don’t have them. Instead, add cumin powder along with the remaining spices.Combine the Potatoes with Spices and Tempering: Add the parboiled potatoes with spices and salt. Toss to combine.

Air Fryer Instructions for Making Bombay Potatoes

Preheat the air fryer to 190°C for 2-3 minutes. Transfer the spice-coated Bombay Potatoes to the air fryer basket and roast for 16-18 minutes until crispy.

Oven Instructions

Preheat the oven to 200°C. Transfer the potatoes to a roasting dish and roast for 25-30 minutes until crispy.

Stovetop Instructions

Pan-fry the potatoes for a few minutes until crispy. Once golden brown, remove from heat and add lemon or lime juice. Garnish with fresh chopped coriander. Serve hot with naan, rice, and raita.

Tips and Tricks

Boil the potatoes: For the perfect texture, it’s important to boil the potatoes until they are fork-tender. This will ensure that the potatoes absorb the flavours of the spices and become deliciously soft. Like Them Extra Crispy? Add 2-3 tablespoons of rice or chickpea flour to the potatoes for extra crispiness just like in our air fryer crispy potato slices. Use fresh spices: Using fresh blend of spices will make a huge difference in the taste of your Bombay Aloo. If possible, grind your own powdered spices like ground cumin, ground coriander and garam masala. Change up the spices: I use basic combo of spices. But for a variations, you can add curry powder and fresh ginger and garlic. Adjust the spice level: Bombay Aloo is meant to be a spicy dish, but you can adjust the level of spice to your liking. Add more Kashmiri chilli powder for a spicier dish, or reduce it for a milder version. Add lemon or lime: Adding a squeeze of lemon or lime to your Bombay Aloo before serving will brighten up the flavours and add a refreshing zing to the dish.

Make-Ahead Bombay Potatoes for Christmas

Prepare the garlicky potatoes in advance by parboiling the potatoes and tempering them with garlic and cumin. Toss with spices and cover and store in the refrigerator until ready to use. This can be made at least 24 hours ahead. Before guests arrive, roast them for 18-20 minutes in the air fryer until golden brown. Garnish and serve!

Variations

While traditional Bombay potatoes are made with Indian spices, there are a few variations you can try to switch up the flavors: Can I use regular potatoes instead of baby new potatoes in this recipe?Yes, you can use regular potatoes, but make sure to cut them into smaller pieces to ensure even cooking. I prefer the baby potatoes as they don’t need to cut, there by saving time. How can I reduce the spice level in this recipe?Simply adjust the amount of Kashmiri chili powder to suit your taste preferences.
