On one of those gorgeous Saturday Mornings, I woke up surprisingly early. After spending a few minutes on the couch peacefully, enjoying my cuppa and the feed-in my iPhone, I wanted to prepare a feast-y breakfast for the kiddos. Waffles, Pancakes ?? After a bit of debate between the two, I opted to make a super easy Blender Oatmeal Pancake. American Fluffy Pancakes are my to-go Pancake recipe and it has been tried and tested by many. To incorporate Oatmeal in the recipe, the rolled oats required a bit of whizz in the blender to get to a flour consistency. And then it occurred to me - How about making the whole recipe in the blender itself. My little missy joined me in the kitchen and wanted to help mumma. So it was so much of a girly morning!! When I told her " We are going to make Pancakes in the Blender." She went ga ga… Missy thought mumma was fooling her by not using a mixing bowl. But we didn’t have to use a mixing bowl, as all the ingredients went into the blender. Missy found the whole thing absolutely exciting as we added the ingredients one by one including the eggs into .. Whizz and the pancake batter was ready. How cool and perfect for a Saturday morning isn’t it! Being a Food Blogger, I often get lucky to experiment with new kitchen gadgets in my test kitchen.. It was wonderful to have Scott Simplissimo Chef - a multi-purpose kitchen appliance that helps discover stress–free way to cook. And we made our Blender Oatmeal Pancakes in Simplissimo Chef just by using the Blend function. Ingredients¾ cup all-purpose flour/plain flour½ cup rolled oats ( blitzed into approx ¾ Cup oats flour)1 teaspoon caster sugar1 tablespoon Baking Powder2 tablespoon butter (melted at room temperature)2 Egg Beaten11/4 milk (Add another ¼ Cups if needed)½ teaspoon Vanilla ExtractPinch of Salt Oil as needed while cooking the PancakesDirectionsAdd the rolled oats and blitz to obtain oats flour. Measure out to ¾ cup Oats flour and transfer to the blender jar. Add all ingredients into the blender and blitz. If the mixture is thick, add another ¼ Cup of Milk.Heat the non-stick pan on medium heat, making sure it is hot. Using tissue paper, coat a layer of oil on it. Pour 2 small ladle of the batter onto the pan, allowing it to spread on its own. When the bubbles begin to appear, flip the pancake and cook for another 1 minute or so. The pancakes would rise about ½ inch. Fry until they turn slightly golden.Repeat the process until all the batter is used up. Keep the pancakes warm by stacking them in an oven ( heated at the lowest setting). I could make 16 Blender Oatmeal Pancakes with this measurement.
