At the 10 minute mark, you can start checking the temperature of the salmon and pull it out right at 145 degrees Fahrenheit. This is my favorite instant read thermometer which can be left in the oven with the salmon while it bakes. You can also tell salmon is done by its texture. When you push down very gently with a fork, it should flake apart easily.
