It’s been a few weeks now since the quarantine began and the ONLY one that’s been getting a solid workout at home is my kitchen! I kid you not when I say that I can’t remember the last time I’ve cooked these many meals in a day. But in spite of all the dirty dishes, it’s been fun churning up new recipes and experimenting with old ones. One of the best things that have come from all of us being home all this time, is that Little Dude is now successfully able to unload the dishwasher and put everything away in their rightful spots every morning. However, he enjoys the chore so much, that he tends to empty stuff out every time he sees anything in there – even before the dishes have had a chance to be cleaned. I guess we might have to work on this a bit! Because of the limited grocery shopping that we’re forced to do during this quarantine period, it’s been a bit of a challenge using up what we have in creative ways so that we don’t get bored eating the same things day in and day out. One such ingredient that everyone seems to always have on hand is bananas – more specifically, over-ripe bananas. Which is maybe why Banana Bread recipes have hit an all-time high! Well, if you’d like to try something new with your bananas – that’s also easy-breezy and super delicious, then look no further! The only special thing that you’ll need for this recipe is an Aebleskiver Pan or as they call it in India, an Appam Pan. But fear not! Using a regular non-stick pan, you can turn these balls into mini pancakes or coins. They might not be round like mine, but I promise you they’ll be equally delicious!
