About Methi Mathri Recipe

Mathri are crispy flaky fried snack made with plain flour or whole wheat flour and spice powders. Its known as Mathiya Or Mathari too! I like to flavor my mathri with Methi ( Fenugreek leaves ) for added flavors. It is often made during festival seasons like Diwali, Holi etc. Over the time, I have started baking my mathri for a healthy snack option. Not only in festive seasons, we savour this baked methi mathri all though the year.

Ingredients you will need

Flour - Plain flour or Whole wheat flour is great for making Mathri. Ideally they are made with Plain flour, but I love my snacks healthy and hence I use Whole wheat flour in this recipe. Fenugreek Leaves ( Methi ) - Use fresh leaves or dried leaves ( kasuri methi ) - either of them are good in this recipe. In this recipe, I have used dried kasuri methi, which is easily available at an Asian Grocers. Spice Powders - Turmeric, Chilli Powder and Cumin Powder lends great flavors to this baked snack. Baking Powder - Adding ¼ a teaspoon baking powder lends a lighter texture to the Mathri. Its Optional if you prefer to leave it out. Cumin Seeds or Ajwain Seeds can also be added to mathri. ( Optional ) Salt to taste Oil - Sunflower oil or Vegetable oil can be used. Water - Use as necessary to knead the mixture into a stiff dough.

How to make Easy Mathri recipe for Diwali step by step

Step 1 & 2 - Gather the ingredients for the mathri . In a mixing bowl, add flour, kasuri methi, spice powders, baking powder and salt. Stir to combine. Step 3 & 4 - Add the oil to the flour mixture and rub the ingredients together. The mixture will turn crumbly. Step 5 & 6 - Now add a little water at a time to knead the dough for at least 5- 7 minutes. Cover and rest the dough for 20 - 30 minutes. Step 7 & 8 - Divide the dough into 2 balls. Pick one ball at a time, roll flat into ¼ inch thickness. Step 9 & 10 - Using a pizza cutter, cut squares or cut into circles using cookie cutter. Prick the mathris with a fork and brush with little oil. Step 11 & 12 - Transfer the mathri to a baking tray. Bake in Preheated oven at 180 C for 18 -20 minutes, flipping once in between. For extra crispness, bake a little longer. Transfer the Mathri to a wire rack to cool down. Once cooled, the mathri tends to crisp a little more. Store the baked methi mathri in air tight container. It stays fresh for up to 10 days in air tight container kept in room temperature. For Variations you can add cumin seeds, carom seeds or even use chickpea flour.

Can I Air fry the Mathri?

Serving Suggestions

Methi Mathri can be served along with masala chai or pickle. I do love to snack on them as a stand alone dish too without any accompaniment. Air fry for 8 - 10 minutes, flipping once in between. Transfer the cooked mathri to a plate. Repeat the process for the remaining mathri.
