What is Ambrosia

Ambrosia salad is a common holiday and potluck fruit salad made up of fresh or canned pineapple, mandarin oranges, mini marshmallows, and coconut. This quick bread recipe puts a spin on those ingredients and results in delicious, sweet, quick bread.
A quick bread is one that doesn’t need yeast or a rise time. It cooks up the same way that muffins, cake, and cupcakes cook. Whipping together in less than 10 minutes, this is a great bread recipe that your whole family will love.

Mix dry ingredients. Whisk together flour, baking soda, and salt in a large bowl. Then add chocolate chipsWhisk together wet ingredients. Combine mandarin oranges, cooled butter, eggs, sugar, and vanilla in a medium bowl.Combine wet and dry ingredients. Gently fold the wet ingredients into the dry ingredients. Then mix in the cherries. Be careful not to overmix.Bake the bread in a bread pan. After it comes out of the oven, allow it cool in the pan for 10 minutes before transferring it to a cooling rack and letting it cool for 35 more minutes before slicing.

Start by whisking the flour in its container or bag.Use a spoon to scoop it from the container into a dry measuring cup. Level off the measuring cup with the flat end of a spatula.

Coconut: A few of the rounds of testing had shredded sweetened coconut in it. It is delicious in this. I ultimately left it out because I didn’t love the texture of the coconut in the bread. But if you are a big coconut fan, add 1/2 a cup.Nuts: If you love nuts in your bread, this is a great one to add them to. Walnuts or pecans would both be fantastic in this. I would suggest adding 1/2 a cup.Pineapple: This recipe would do great with pineapple instead of mandarin oranges. Be sure to use the same size can as is called for of oranges.

This recipe can be frozen as a whole loaf or as pieces. To freeze it as a whole loaf, let it cool completely and remove it from the bread pan. Then wrap it several times in plastic wrap before storing it in the freezer. It can be stored in the freezer for up to three months. Allow it to thaw on the countertop overnight when you are ready to eat it. To freeze slices of Ambrosia Bread, lay the slices on a parchment-lined baking sheet. Freeze the slices for four to six hours, then transfer them to an airtight container and store them in the freezer for up to three months. Let thaw on the counter when ready to enjoy.
