If you thought chocolate was addictive, you haven’t tried roasted garlic! You will soon be slathering this literal umami treasure over everything and anything! Garlic is a flavor powerhouse, but roasting it transforms it. It has a slightly sweeter, mellow flavor. It becomes more intense but, at the same time, more mellow. The sharpness disappears, leaving only the umami that’s been intensified to about 100! You can roast garlic in the traditional oven, too, but it takes slightly longer. Air-frying frees up the oven for other things, plus you don’t have to power up a large appliance for one bulb of garlic. Roasted garlic can go anywhere raw garlic goes- on naans, mashed potatoes, garlic breads, and pasta sauces. You can also use this roasted garlic to make garlic butter to slather over your morning toast.
Ingredients
You only need three things to make this - garlic, oil and salt.
Garlic
Use the large fresh garlic pods. Bigger garlic cloves mean easier peeling for more garlic. You can use the smaller garlic pods, too, but they are a tad more challenging to peel or squish, as is the case here. You can roast peeled garlic cloves in the air fryer. I will explain how below. The process is a little different—it’s more confit than roasting—but it’s so delish!
Instructions to Roast Whole Garlic
Here is how we roast a whole pod of garlic. Cutting the top off the garlic bulb will help you squeeze it out once it has softened and roasted. Close the ends of the foil tightly. Otherwise, oil and steam will escape. Air fry the Garlic at 200C or 400F for 25-35 minutes until it reaches the desired creamy texture.
Instructions to Roast Peeled Garlic Cloves
Here is how we make roasted garlic cloves.This method is almost the same as garlic confit, but it is done in the air fryer instead. It also uses more oil than roasting the garlic whole. Make sure the cover is tight; otherwise, your garlic can burn instead of caramelizing. You can also use a baking-proof cover or cake pan to cover it. You should get buttery, soft, confit garlic that you can slather on toast immediately. The leftover olive oil is also gold! It has so much flavor. Drizzle it or mop it up with some bread! Just add some herbs to the mix, and you get a delicious dipping oil, too!
Storage
Roasted garlic can last on the countertop for 3-4 days. It can last in the refrigerator for up to 8-10 days. Store it in an airtight container, or your whole fridge will smell of garlic. I would love to know how you used your roasted garlic! Do leave me a note in the comments.
How to Roast Garlic Without Aluminum Foil
